You can customize the toppings however you want and the best part is that you can store it in the freezer for snacking whenever that sweet tooth hits! I suggest using whole milk/full fat yogurt to keep these bars super creamy!
- 3 cups plain Greek yogurt
- 1-2 tsp vanilla bean paste (or vanilla extract)
- 2 tbsp maple syrup
- 1 scoop vanilla Whey Back
- 1/2 cup fresh blueberries
- 1/4 cup chocolate chip
- 1/4 cup shredded coconut

Add the yogurt, vanilla, maple syrup and protein powder to a large bowl. Mix until everything is smooth and combined. Taste and adjust sweetness, if desired.
Prepare a cookie sheet with parchment paper then pour the yogurt mixture onto the sheet. Spread into a thinner layer with a spatula, 1/4” thick or so.
Next comes the fun part, sprinkle your toppings across the surface!
Place cookie sheet in the freezer for 8 hours or overnight. Remove from freezer and break into “bark” size pieces. Store in the freezer and enjoy! You can thaw the pieces for a minute or two before eating as well.
