We're switching up the energy ball game and introducing a protein and fiber-packed ingredient to this recipe: chickpeas! Additionally, these bites of goodness are refined sugar free and perfect for on-the-go.
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1/2 cup peanut butter
- 1/2 scoop Earth Fed Muscle Vanilla whey
- 1 tbsp chia seeds
- 2 tbsp maple syrup
- 1 tsp vanilla extra
- 1 tsp pumpkin pie spice or ground cinnamon
- 1 tsp coconut flour
- 3 tbsp cacao nibs (or chocolate chips)
Once drained and rinsed, place chickpeas into a clean kitchen towel or between paper towels and dry. As you dry, the skins should loosen or come off. Remove as many skins as you can; you can leave the skins on but the dough may be gritty.
Add the chickpeas, peanut butter, whey, chia seeds, maple syrup, vanilla, and spices to a food processor and mix until combined and smooth.
Transfer dough to a mixing bowl and fold in the coconut flour and caco nibs. The dough should still be a bit sticky, but not liquidy.
Place dough in the fridge for 10 minutes to chill. Once chilled, remove dough and roll into 14 balls. You can moisten your hands lightly with cold water to help with the stickiness as you roll.
